72 small precooked frozen meatballs, I purchase mine from Costco
1 can cranberry sauce
1 cup russian salad dressing
1 tbsp dark brown sugar
1 tbsp lemon juice
1 small bunch scallions, diced and used for garnish (optional)
Instructions
Preheat oven to 350 degrees. Lightly spray two full sheet pans with cooking oil. Arrange meatballs on sheet pans spacing 1" apart and bake for 20-25 minutes until meatballs are cooked through.
While meatballs are baking, combine cranberry sauce, russian dressing, brown sugar and lemon juice in a small mixing bowl. Stir to combine. Add mixture in a very large saucepan and bring to a soft boil over medium/high heat, stirring occasionally. Turn heat to low and softly simmer for about 10-15 minutes stirring until a thickened sauce consistency forms.
Remove meatballs from oven and add meatballs to the large saucepan with sauce. Using a spatula, fold meatballs into sauce until meatballs are well covered in cranberry sauce. Simmer until meatballs are heated through and absorbs some cranberry sauce, about 4-6 minutes. Garnish with diced scallions. Serve with appetizer forks or large toothpicks.
